I wouldn't say this is where REST shines. Letting the server dictate the data returned makes it challenging for clients to evolve separately

3/3 My #android UIs: Most UI structure is hardcoded. I would need to generalize to my own AppML to then be independent within that.

That is why a browser UI is simultaneously better and worse than a native one. I suggest to avoid building your own native browser.
