Does anyone ever minimize a window on OS X? You know, with that little yellow “⊖” button in the middle?

yep, very often, to clean up my screen. Typical apps: safari (set of tabs open for later) & terminal windows.

I just recently started using a minimise keyboard shortcut. Jury's out on whether I'll keep doing it.

Never. Usually, I hide the whole application using Cmd-H.
