Do you consider UML as universally applicable in software as math?

Of course those two are completely different categories of things, but I’d still say yes

Yes. Think of it as algebra. We can express a rate-of-change problem as an algebraic formula. Or we could use calculus. Algebra is not the only way and it won't apply everywhere but it's a universal way of expressing many problems or solutions.
