Probably best going fairly mainstream, Ubuntu or something. I doubt you want too much hassle, and still very customisable etc

While I can boot 5 distros of Linux, most of my work is done on Linux Mint with Cinnamon desktop.

Need to replace my laptop. Thinking of stacked Raspberry Pi 3's using Blade. Linux limits me to 4096 cores, settle for 16.

Arch Linux if adventurous, Ubuntu has a great out of the box experience however. :)
