Yes, getting root access remotely on an iOS device is a big deal, but that is still far far away from something like ransomware.
(1/2) Because 1.: As I already said, it's close to impossible to find the necessary 0-days, and even if you did, there's much more
(2/2) profitable things you could do with those (eg. selling) 2.: With the modern jailbreaks, a reboot is all it takes to get rid off root.
