Today's adventures in sourdough feature granary flour and wholewheat to produce what will hopefully be a sandwich loaf which is rich, complex, and nutty. I think I shall call it Hank Scorpio

Oh I'm trying half wholemeal rye and half white! First time to use only sourdough and I've made it all up as I went along, do in a bit nervous. But I let it prove overnight and it's big!

Sounds good. I'm focussed on sandwich loaves, so making them yeasted, though the sourdough does rise nicely I'm wanting a close crumb which is harder (though not impossible) to do with pure sourdough.
