I'd note that I accept Zoom is often the only solution which *works* for people, but my goodness me it has shown to not have done a good job of sorting itself out after last year's security scares.

I agree with all of this. For my own use of Zoom, and that of my company, using it remains an acceptable tradeoff vs those risks (which I’m evaluating often) - and everyone so far is yelling β€œdon’t use zoom!” without also recommending a *credible* *proven more secure* option.

Many people I know are standing up their own jitsi installations on the basis that at least it's a 'devil you know' but I doubt it'd do as well or as much as zoom sadly :(

Yeah, I can see the appeal, but have long since learned that the free and open source solutions to these problems are mostly a world of suck.
