I usually have vegetables that I can steam or roast quickly to go on the side of something and that's very quick to prepare. Sometimes I make big batches of pisto/Ratatouille and modify it during the week as a pasta sauce, shakshuka with eggs, with rice or meat as a side

I also try making a big pot of soup on Sundays to last me for the whole week. If you have a good freezer you could make a couple and freeze them. Also things like lasagna or pies, or marinated fish or meat. Make it on a Sunday, freeze it, use it during the week for a quick dinner
that looks amazing.
