So what makes it take so long? Is everything on one ballot and therefore the number of propositions and such like affect it?

One reason is that vote by mail ballots need to be postmarked on or before election day and received by Monday following

It just seems odd to me, as someone where the final results are normally declared ~6 hours after polling stations close.

That just a journalistic estimate of final results. Official results in the US take a month or so.
