How can lead pipes be a thing in the U.S. when it's well known that it was a bad idea when Romans did it 2000 years ago?

How was it known to be a bad idea then? (Also, "plumbing" from Latin/French for lead.)

I was taught the conclusion so early in life that I don't recall if I was taught the process by which it was reached.

There was certainly some belief that lead had ill-effects, both as piping and lining aqueducts, in 1st century AD.
