Using that live translate feels like divination or some other mystical art. You're just getting this constantly changing stream of information with hints of substance and maybe you can figure it out?

I tried it in Rome when I was there and even with Italian鉃★笍English it was shaky at best. Trying it on CJK languages gave me the same result you got. With enough context I can mostly puzzle it out but wow

When I use it on menus in Japan it's like nonsense, nonsense, nonsense, ah there's recognizable food words

The non-live version (i.e., take a picture, select the text you want) is often much more reliable than the live version. It also, if you have some understanding of the writing system, lets you correct the characters it got wrong.
