Had to look up "bread cloche" 馃槤 My roommate has been making bread every weekend in our Dutch oven - she's gotten a lot of practice with scoring and it's so good....!
Do you have a favorite recipe? Or tips about fluffiness? All the bread I've made is super dense and v unfluffy and now I'm like "fine I'll just buy Acme bread OK"
One other thing that might affect density is quantity of salt. (Different physical forms of salt,e.g., small/large crystals, are different density, so dealing with recipes that measure salt by volume requires care.) Salt suppresses yeast activity and makes bread denser... [1/2]

That said, my bread-baking experience is all no-knead breads (most recipes from artisanbreadinfive.com/) with high water content, so I'm accustomed to cheating, and thus my advice might not be applicable at all. [2/2]

@davidbaron could you incorporate starter in your no-knead bread for more flavor, or would the long rise time cause bad side effects?

I haven't tried... although I'd guess the main potential problem would be if it needed long resting time after forming the loaf, although even that isn't a problem as long as I don't mind the bread being a bit flat.
