Made my first sourdough from a week-old starter. Idk if any of you have made sourdough before but damnnn this dough rested more than I ever have in my life! 馃槾 Started the dough 18 hours ago but it's worth it! Hoping to get more rise next time as the starter matures!

I actually got a countertop proofer that works similarly and it had almost all day to prove in it's humid box 馃槄 I just think the starter isn't quite strong enough yet. It was still yummy just not as light as I had hoped!
Yeah could have been that! I also ordered a bread cloche to improve the actual baking. Too invested now 馃槀
Had to look up "bread cloche" 馃槤 My roommate has been making bread every weekend in our Dutch oven - she's gotten a lot of practice with scoring and it's so good....!
Do you have a favorite recipe? Or tips about fluffiness? All the bread I've made is super dense and v unfluffy and now I'm like "fine I'll just buy Acme bread OK"
One other thing that might affect density is quantity of salt. (Different physical forms of salt,e.g., small/large crystals, are different density, so dealing with recipes that measure salt by volume requires care.) Salt suppresses yeast activity and makes bread denser... [1/2]

That said, my bread-baking experience is all no-knead breads (most recipes from artisanbreadinfive.com/) with high water content, so I'm accustomed to cheating, and thus my advice might not be applicable at all. [2/2]
