It is so strange to make that analogy in the context of a French restaurant, and then not say anything about the fact that "serveur" means both server AND waiter in French.

I don't hear normal people use the term, but restaurants seem to like it. The host will seat you and say, "your server will be with you shortly" or something. I think it might be to avoid the gender awkwardness around whether to call female servers "waiter" or "waitress".

Yeah, agreed, it's in the category of words that have become a lot more common in the last 10 or 20 years because it's gender-neutral. Probably more common in some places than others (e.g., maybe mostly US).
