Specially for you we have a local server which you can deploy in any environment and even isolate it from the Internet
Bluetooth is in Beta, you can try. Some people are successful with that. However, Blynk was designed for the -=Internet=- of Things, where Internet is the key word.

The WiFi upgrade is awesome! Probably the first flower running on a dual-core 32-bit processor @ESP32net. It took me more than I originally anticipated but was worth it.
