as far as I know you can't get access to that on iOS, it's just an abstraction and gives you just the GPS coordinates. I haven't looked at the actual APIs in quite a few years but that's at least how it worked last time I checked.
I absolutely would use it for tracking events! I had to write some front end code specifically to do that now but I'm missing out on some data because I can't do it server side

It would be useful if they showed that notification *only* when the paste was not in response to a user action. I would appreciate knowing when an app accessed the clipboard. it's redundant when I click the paste button and then see this because I already know that I am pasting.
