Sorry to reopen this. If I want to record with two cameras then later in the final video switch between witch cameras to use, how would I record multiple "channels" then later "mix" them?

Yes if you want multiple cameras running the entire time, synchronizing and clipping/mixing can easily happen in post production. My preferred setup is to use my Elgato switchboard to flip between predetermined cameras/scenes during class so I don’t need to do any post.

I'd be looking to mix in post so I don't have to think about it while in class. So you know how to record to separate channels then do swapping in post?

I think that THE way to do this right now is to get an ATEM Mini ISO or Atem Mini Extreme ISO. That refers to ISOlated recordings of each channel. This is what I know @aaronpk does, and @Alexpettitt describes here: youtube.com/watch?v=Gn1MAfBQ…

the ATEM Mini ISO is probably the cheapest way to do this tbh. You can cobble it together in software with multiple capture cards but that's gonna be more fragile in the end, and not much cheaper either
