I’m really surprised people don’t already do this. A pan-fried cheese skirt is a fabulous addition to any sandwich. My standard grilled cheese spread is mayonnaise mixed with grated Parmesan.

I recently learned to beauty of grilling cheese before putting it in my quesadilla, and life has never been the same ever since.
