I am struggling to understand why the site is as slow as it is. It's just php->nginx->nginx. I feel like my tweaking to try and squeeze out performance is maybe working against me. Does anyone have an ultrafast config they use for a reverse proxy setup like this?

I would troubleshoot this by testing performance before it hits last reverse proxy. Also if you are using multiple php-fpm instances (not workers) nginx might push all traffic only to one instance.

I've noticed this does not happen all the time. Finding bottlenecks is hard, but I don't think it's a PHP issue since static files also have the same issue. They load fast at times, and slow at times like now.
