Digital Combat Simulator. Accurate simulation of aircrafts (also combat). Even getting engines running is a rewarding fun task! Thankfully there are tutorials and aircrafts are not as hard as newbie may think. I started with old WW2 airplanes, but now I'm with F/A-18.

Also the VR is made very well. You can setup universal on/off/less/more buttons, so you can press cockpit buttons directly without shortcut keys. You can also use Oculus Quest's handtracking for cockpit buttons, but it was too unprecise for me.
