I payed for minecraft java and bedrock already yet my launcher will not allow me to play the demo or the full game

Demo issues can be tricky, but that tends to happen when you're logging into a Microsoft account that isn't linked to a game license. Make sure that you're logging in using the Microsoft log-in and that you're using the right account. ^BT
