If you scroll down through the listed items, you'll be able to see what data is being collected for Minimal or All. If you have feedback about the collection of telemetry data, you can submit it to our feedback site at feedback.minecraft.net/hc/en… so our devs can take a look. ^LK

Telemetry data can be viewed in the Options in Java. It's information about your gameplay that helps us improve Minecraft. For example, if we see that a lot of people are only able to play for 1 second after an update, it might suggest the game is crashing and needs a fix. ^LK

Only if the user turns on the WiFi network. Though in the Minecraft Launcher on PC, Mac, and Linux, you do need to log in to your account to verify ownership, so yes? It does connect through the WiFi to the internet. ^LK
