@MojangSupport purchased “Skyblock” for my son this morning on his ipod and its stuck on “Purchase in progress. This shouldnt take long.” We have updated to the latest version on the app store. Please advise.

Please try force-closing and restarting your Minecraft app. If this doesn't work, please try restarting the device, as well as logging out/in with your Microsoft (Xbox Live) account in the game's settings. I hope this helps! ^SA
