A Microsoft account can only be linked to one Mojang account, I'm sorry to say! If you have multiple Mojang accounts, you will need to migrate each one to a different, individual Microsoft account. ^BT

You shouldn't have to buy it again! If it's asking you to play the demo, it's possible that you're logging into an account that doesn't have a game license. Please make sure you're linking into the right account and you should access your game. ^BT

Unfortunately, you won't be able to transfer a blank legacy Mojang Account over to an account that already owns Java and Windows 10 Edition. ^TK

You will only be able to get the Java Edition free if you have the Windows 10 purchased on your PC> ^TK

Great questions and more than happy to help! First, it doesn't matter if you get Java or Bedrock, you both just have to be on the same version. If you're wanting play together you will need to get a Realm which you can purchase with a copy of the game. ^TK
