It sounds like the launcher may not have the proper permissions. Make sure your antivirus and firewall have permissions allowed for Minecraft to read and write files, and try running the program as Administrator to see if that helps! ^AM
Make sure you have a stable connection by switching to hardwire if you are on WiFi, try resetting the router or internet connection, and make sure the firewall/antivirus settings allow Minecraft to read and write files. ^AM
You may try restarting both the switch and the router. Ensure there is enough storage space by removing any unused content or save data as storage can cause these issues on Switch. ^AM
