You may have to update manually. Check this article for Xbox One instructions: msft.it/6018kI4qa. For your laptop, the Bedrock version can be updated through the Microsoft Store, and the Java Edition should update automatically. ^NS

Dolphins should definitely still be spawning as usual, so it's odd that you're not seeing them! If you don't see any for quite a while, check our bug site at msft.it/6011kINNT to see if you can find a matching report. ^NS

Are you seeing a specific error message when you try to log in? If you've just migrated, keep in mind you'll need to go back and select the "Microsoft Login" option in the launcher. ^NS
