Meh, more people should be able to explore what they find fun. Older people with jobs might just not have the time to learn in-depth mechanics, or the younger folks who struggle with it. So yeah, fine with easy mode

No. Some games are designed with a certain difficulty level to convey certain feelings of helplessness to the player that would otherwise be lost in making the game TOO EASY. Game design is every bit as much an art as a comic or book, and not every game is for every player.

No, not every game needs to be for everyone nor should they be. Trying to appeal to everybody is a surefire path to mediocrity.
