From a consumer standpoint, sure. From an artist standpoint, only if the creator decides so. Games are in a weird place between consumer product and art. I believe the creator has the final say, but also support individuals changing the game through mods or exploits/ glitches.

No, they should not. It's easy to say "But everybody should be able to enjoy them", but the thing is, if you wanna do it properly, doing different difficulties takes a lot of additionnal dev time, that ends-up not being put in other aspects of the game. IMO, people - 1/2

no, there are millions of games out there, not every game needs to be made for everyone that is the great thing aout all these platforms, ways to play and input methods.. its already very fucking accessible as it is, if the developer want their game to be a challenge let them.

Easy Mode doesn't take away anything. Take Devil May Cry as an example. No one complains about players beating it on easy and it gives a mode for players to experience the story. While the hardcore players still have things like Dante Must Die modes to feel accomplished and brag.
