I think people should realize that normal people do not hold a beef for over 7 years over something as minuscule as not putting a link on a youtube video

I don't think it's right to simplify it like that. It seems clear to me that MatPat really loved Undertale, but between the harassment he received for making harmless theories and Toby's passive-aggressive comment, it just wasn't worth the negativity anymore.

I would love to have had MatPat doing chapter 2 theories.

I don't really understand why anyone thought they hated each other like, at all. MatPat still made the Sans Is Ness joke like at least a few times after the incident and Toby was only annoyed by that one blunder

Well, according to his recent gtlive, he says he is "testing fate" and releasing a deltarune theory because he didn't get a chance to speak about chapter 2, he said he tried to get an angle that hasn't been talked about too much

Also mat only stopped making undertale and deltarune videos because people always harassed him over his theories for them and he couldn’t handle the pressure
