In the video you sent he had extra time due to how close to the crafting table he was, it's impossible to do it with Dream's velocity

it's different in multiplayer due to server lag, the person doing it in the video was online by themselves with nobody else, thus they had less lag than dream did

or it could be the server itself, or just dream's internet, could be a variety of factors

Here's a side by side comparison for the time it takes for Dream's crafting window to close vs the time it takes for an average player's crafting window to close. The amount of frames it takes for my crafting window to close is 16, while for Dream it is 32. Double the time.

How Velocity in Minecraft works is youre slower at the start of your fall than when you’re about to hit the ground. But there is also a limit as to how fast you can go while falling, the two clips both reached that limit

You're forgetting that Dream was pushed off the platform. Not to mention the velocity would be different in that clip due to block height. We don't know when exactly the person in that clip started falling.
